Meet Monia, a cheese expert who will be your private guide for your Parmigiano Reggiano tour and tasting at a local cheese-making facility founded in 1800, on the hills of Medesano, in the province of Parma. This farm has been producing the milk for Parmigiano Reggiano for over 200 years. Monia, a Parma native, is passionate about the local produce in her area and is delighted to introduce you to how authentic Parmigiano Reggiano cheese is produced in this modern facility. Get an early start for this unique tour and tasting of Parmigiano Reggiano at a family-owned cheese factory. The cheese facility is unique because they own the entire supply chain, from the pastures to the cows to the dairy. In addition to visiting the brines and aging rooms, you will have the opportunity to see the making of Parmigiano Reggiano and view the cheesemaker working with his hands in the cauldrons to create the 'king of the cheeses'. See how milk turns into cheese and learn about how the natural aging process at Bertinelli makes their Parmigiano Reggiano easier to digest and allows the cheese to develop complex aromas and extraordinary flavors. After your tour, sit at a table at the café indoors or outdoors (weather permitting) for a tasting of three aged cheeses and a special cream of parmesan on bread. Learn how to use all your senses when tasting as you enjoy your cheese paired with nuts, bread and balsamic vinegar. Your cheese tour and tasting will last about an hour and a half. Please note that this producer does offer a free tour directly on their site. The difference between their free offer and this experience is that this is a private experience with an expert and includes a food pairing and tasting with a personal guide who will give you an in-depth understanding of tasting and appreciating Parmigiano Reggiano.
