When Luke Mathot travels, he explores with his car, his eyes, and most importantly, his taste buds. “I want the most immersive experience possible wherever I go,” Mathot says. This explains why he enjoys eating soup from paper cups in Jamaica and comparing buss up shut at roadside stands in the eastern Caribbean. It’s also why Mathot jumped at the opportunity to be at the culinary helm as Vice President of Food & Beverage Product Innovation for Sandals Resorts and Beaches Resorts.
Let’s take a ride to the Caribbean, circa 1950s. Travelers are beginning to discover a lush island with virgin beaches, impossible ocean views, and the friendliest people in the world: Jamaica. They’re drawn specifically to Ocho Rios, a hidden gem on the island’s north coast where they can be among the first to experience the new Arawak Hotel. The hotel is an architectural masterpiece. The rooms are creatively angled toward the sea. Art-deco elements, novel for the time, infuse sophistication into the tropical destination. At the center of it all sits a banyan tree, with its arms out wide, welcoming guests to this living island getaway.

The definitive libation of the region, rum coats the tongue in the smooth molasses of fermented sugarcane, aged in oak barrels and served in a myriad of ways – a drink so versatile, it begs for its own dedicated bartop.
For the longest time, Caribbean Heritage Month has been celebrated during the month of June. While communities honor their Caribbean heritage with Junkanoo festivals, steel drum bands, and food trucks serving jerk chicken and Red Stripes, let’s acknowledge the obvious: There’s no better place to live, breathe, and celebrate Caribbean heritage than on the same islands where it originates — and which by no coincidence are home to all 24 Sandals and Beaches Resorts.
Over the weekend of May 19, a new moon rose in the skyscape of Ocho Rios, Jamaica. With it came a cosmic reset and a renewed sense of direction for the Sandals Resorts family. In great celebration and legendary fashion, Sandals Resorts unveiled its latest resort, the all-new Sandals Dunn’s River.
On June 8, people around the globe will celebrate World Oceans Day with beach clean-ups, community education, and eye-opening environmental art. For the nearly 20,000 employees of Sandals and Beaches Resorts and the Sandals Foundation, it’s natural to observe World Oceans Day because the purpose is ingrained into their daily lives–How fitting, then, that June is also Caribbean Heritage Month.
May 2023 will forever be a bold entry in the timeline of Sandals and Beaches Resorts' history. Actually, there will be two entries. One will point out magnificence: the Caribbean company unveiling its futuristic Sandals Dunn’s River resort, with Jamaica’s first beachfront sky pool suites overlooking an ocean too beautiful to be true. The other entry will point out a subtle transformation that towers over pools and can be held in the palm of your hand: the logos, refreshed and reworked for Sandals and Beaches Resorts.
The glow of a Caribbean morning reflects off the sea in one direction and off the breakfast table in another. The fruit of Saint Lucia is on display at Sandals Regency La Toc, sweet and colorful enough to wake up guests before the first coffee is poured. Mangos. Papayas. Pineapples. Bananas. In a few hours, at Sandals Montego Bay in Jamaica, the scent of jerk chicken will waft over the pool at lunchtime, and in Grenada the island’s spices will call attention to a dessert tray.

For the Sandals Resorts family, World Oceans Day is more than a pin on the calendar. For us, World Oceans Day (June 8th) is a momentous annual event and a checkpoint to which we measure our progress.
