Featuring the freshest ingredients from local farms, dairies, and the surrounding ocean, chefs have perfected a wide variety of elegant and delectable New American and Hawaiian-inspired dinner options. Sample menu (subject to change):
Appetizer:
- Local mixed baby greens—Maui onion, red and yellow bell peppers, baby heirloom tomatoes, Southwestern vinaigrette, crumbled feta or gorgonzola
Entrée (Choose 1):
- Certified Angus beef double cut braised short ribs–served with herbed mashed potatoes and organic honey-chipotle demi-glace
- Sautéed local mahi-mahi—served with Kula spinach, herbed mashed potatoes, Bellwether Farms gorgonzola, pancetta, and Chardonnay beurre blanc
- Oven-roasted Shelton Farms all natural chicken breast—stuffed with local Ali’i mushrooms, braised apples, spinach, smoked mozzarella, and wrapped in crisp pancetta, served with tomato risotto, and port wine demi-glace
Dessert (Choose 1):
- Triple berry pie—a luscious combination of raspberries, blueberries, and black currants nestled in a light flaky crust set on fresh whipped cream
- Road to Hana, Maui—layers of Hawaiian vintage chocolate cake, chocolate sour cream mousse, and macadamia nut caramel
