Two hours south of Puerto Madryn, the Atlantic coast of Patagonia is awash with more than one million Magellanic penguins that congregate each year to mate and feed.

Drawing on the amphibious nature of penguins, our Monochrome recipe features flavors inspired by the land and sea. The land is represented by the herbal essence of Fernet-Branca – an Italian amaro that may well be considered Argentina’s national drink – and Scottish Drambuie, a liqueur made from whiskey, honey, herbs and spices.

The touch of sea comes from Marine Botanical vodka, which is distilled using Australian marine botanicals that impart gentle umami into this cocktail. And as a fitting tribute to the diet of Magellanic penguins, a stripe of squid ink adorns the glass in monochromatic style.

Ingredients:

  • 1 oz. egg white
  • 1/2 oz. sugar syrup
  • 1 oz. fresh lime juice
  • 1 oz. cloudy apple juice
  • 1/2 oz. Drambuie liqueur
  • 1/2 oz. Fernet-Branca
  • 1 oz. Marine Botanical vodka

How To Prepare:

  1. Collect a Collins glass and carefully paint squid ink onto the site of it. Chill and put to one side
  2. Add all ingredients into a cocktail shaker
  3. Fill with cubed ice and shake for 10 seconds
  4. Fine strain into another cocktail shaker and shake for 10 seconds without ice
  5. Drain off any excess water from the Collins glass and pour
